Much closer to delicate French crêpes than American pancakes, pönnukökur are traditionally cooked in a seasoned pan and served with sugar or jam and cream.
Ingredients
- 2 cups flour and 1 tbsp sugar
- 1/2 tsp baking powder and a pinch of salt
- 2 eggs and 2.25 cups milk
- 2 tsp vanilla extract and 1/4 cup melted butter
- Optional: 1 tbsp brewed coffee for colour and depth
Preparation
- Combine dry ingredients in a bowl.
- Whisk in half the milk until lump-free, then add eggs, vanilla, and remaining milk.
- Whisk in melted butter and coffee if using.
- Heat a lightly greased skillet; pour a thin layer and swirl to coat.
- Cook ~1 minute, flip, cook 30 seconds more. Serve rolled with sugar or with jam and cream.
