Kleinur are cardamom-scented twisted crullers with a lightly crunchy exterior and soft centre — a classic accompaniment to coffee.
Ingredients
- 5 cups all-purpose flour
- 1 cup sugar and 150g cold cubed salted butter
- 2 tsp ground cardamom, 2 tsp baking soda, and 6 tsp baking powder
- 2 whole eggs and 2 cups plain yogurt
- Vegetable oil for deep frying
Preparation
- Mix butter into the dry ingredients until crumbly.
- Make a well, add eggs and yogurt, and mix to a firm dough without over-kneading.
- Refrigerate 30 minutes, then roll to 1/4-inch thickness.
- Cut into diamonds, slit the centre, and pull one end through to form the knot.
- Fry in 175°C oil for 45–60 seconds per side until golden brown.
