Kókoskúlur (Oat and Cocoa Coconut Balls)

Round dark-brown no-bake oat and cocoa balls coated in shredded coconut

Pantry staples, zero oven time, maximum chocolate hit. Kókoskúlur are what Icelanders whip up when guests arrive unannounced.

Ingredients

  • 250g rolled oats, 150g sugar, 100g very soft butter
  • 4 tbsp Dutch-process cocoa, 4 tbsp cold coffee, 1 tsp vanilla, ½ tsp salt
  • 100g desiccated coconut for rolling

Preparation

  • Whisk oats, sugar, cocoa, and salt.
  • Add soft butter, coffee, and vanilla. Knead with hands 3–5 minutes until a uniform sticky paste forms.
  • Roll walnut-sized balls, coat in coconut.
  • Refrigerate at least 1 hour until firm. Serve cold.

Chef's tips

  • Cold coffee intensifies chocolate without adding liquid heat.
  • Kids love helping with the rolling step.
